Product & kitchen
We work with local, seasonal, high-quality product, choosing ingredients at their peak and suppliers we have a direct, ongoing relationship with. The cooking starts there: understanding the product, respecting it and getting the most out of it without dressing it up.
The menu isn't fixed. It changes with what the market, the sea and the land offer, and with the team's creativity. We're after a living kitchen — one that moves, that tastes and that never settles.
Wine & team
Wine is a key part of the project. The list is carefully curated — solid and well chosen, frequently rotating, built through ongoing work with wineries, importers and small producers. There's judgement, there's searching, and a real desire for the wine to speak to the food.
Quincé is a place for people who love to eat and drink well, without stiffness or fixed formulas. Behind it is a committed, curious team in constant dialogue, both in the kitchen and the dining room, who understand the project as something alive and shared. A place where things happen, the team has a voice and the experience keeps changing.
